Insta-Wednesday: Current View

[When I was reading the texts from my sisters yesterday evening about our topic for today (current view), I wasn't initially sure what to blog about. This adorable cheerio smile was my view last night as I wrote a note to my Nan. Although I try to write to her once a week I didn't keep up with very well over the summer. Working on getting back into a good routine with it.

These last few days I have been getting up early to enjoy a cup of coffee in the quiet of our new home.  It has been the best addition to my days and I'm looking forward to enjoying this view for a long time.

September stuff

Can you believe that September is almost over?! The first month of school is always a quick one for us as we get accustomed to the schedule and the activities and the homework after a laid-back summer. I'm back in my get-up early routine which looks a little different these days without my beloved cup of hot coffee first thing (I've replaced it with a big glass of water and hot green tea). I get up early to try and have some time to myself to wake up and prepare for the day, but I'm convinced that my sweet girl has a "mama's up" sixth sense and most mornings joins me within five minutes of my sitting down with my Bible. While this can be a little frustrating, I always give her a big smile and a hug before settling her down beside me to sit quietly and wake up herself. We just ordered this clock for her and are hoping that the color change will help her know when it's time to go back to sleep (like when she wakes up at 5 and comes in and tells me she's ready to go downstairs) and when it's time to get up (we'll be setting it for 7!). Cross your fingers for us!

We've had some good days over this first month of the school year (with a few more to go - heading to the Fair tonight if the weather cooperates and celebrating Will's birthday on Wednesday) and I thought I'd share some photos here if you'd like to see.


 Annabel was sick on her first and second days of school this year, but by day 3 she was ready and excited to check out her new school. We hated to leave her old preschool but so far things are going great at her new one. She was so proud of her new backpack and matching lunchbox!

 Tommy's having a great baseball season this fall and is enjoying getting out on the field with his buddies and his dad. Love watching him play!


 Speaking of baseball, Annabel and I saw this amazing sunset on the way home from a game last week. Like Dani said in her Insta-Wednesday post, fall has the best sunsets.

 Annabel had her first-ever ballet class a couple weeks ago and she did not stop smiling through the entire thing. She loved every single second of it and although I never imagined myself as one, the minute I saw her in that adorable outfit was the same minute I willingly declared myself a "dance mom." (And by "dance mom" I mean the calm, relaxed, not-crazy kind. Come on, you've seen the commercials.)

 I brought out my soup pots for the coming chilly weather and have been enjoying the fruits of my simmering labor ever since. I've been cooking a whole chicken once a week and then boiling the bones for bone broth (great for a healthy gut!), which I then use in my favorite soups like that kale, sausage and white bean stew pictured above.

 I made these coconut-crusted chicken tenders last week and was pretty skeptical about whether or not my family would eat them. Turns out that with a little ketchup, they're exactly like chicken nuggets! Everyone ate them and asked for more. Win!

 Annabel and I squeezed in a little ice cream date one day last week in between picking her up from school and then getting Tommy out early for his yearly physical. She and Tommy LOVE cotton candy ice cream. I think it's the most disgusting ice cream flavor ever. Ick.

 I've been making a ton of guacamole lately, which makes Annabel really happy. She could eat it with a spoon and has been known to do just that on the rare occasion that we pick up dinner from Chipotle - she loves to eat it out of those little cups! The other day I asked her which she liked better: my guacamole or Chipotle's. She said mine! Love that girl.

 I made these granola bars on Saturday afternoon and they're really good! I added sunflower seeds, pumpkin seeds and shredded coconut to the entire batch, then split the mixture in half and added chocolate chips to one and dried cherries to the second. While both versions are good, next time I think I'll use almond butter instead of peanut butter in the cherry version. Give them a try!

Tommy's been really into playing around on all of our instruments lately. On Saturday morning we had a concert of piano, then drums, then mandolin and finally guitar echoing throughout our house. From our upstairs hallway, I snapped this quick photo of him singing a hilarious song about Will and strumming along on guitar.

That's what we've been up to the past few weeks. Looking forward to the fair and celebrating Will before welcoming one of my very favorite months. Happy Monday!

Insta-Wednesday: First Day of Fall

Last week we said goodbye to summer and this morning we are welcoming fall! Today is officially the start of one of my favorite seasons and I can't wait to do all kinds of "basic" girl things, like going apple picking, drinking hot coffee on my  balcony in a flannel shirt while reading a Harry Potter book (was that weirdly specific?) and buying a handful of the millions of pumpkin spice products on the market. And while I can't get on board with all of them (frankly the Oreos look gross) this butter sounded like it would be good on just about anything. Last weekend I paired it with a brioche roll and soft-boiled egg and it was soooo good. Now I just need some falling leaves. :) xoCarrie



I could not be happier that today is officially the start of fall!  Along with all things pumpkin and apple, one of my favorite, favorite things about fall are the beautiful skies.  I'm not sure what it is, but I seem to notice the fall sky more so than any other season and every year I am amazed and impressed! -Dana

the road to recovery

Back in July, I wrote about finding out that I have Crohn's Disease and thought I would post a little update. 

After a couple weeks of feeling really good, I started feeling pretty bad again, which did nothing good for my state of mind and left me with a feeling of taking one step forward and two steps back. I spent the rest of the summer doing only the things that had to be done and living mostly inside my own head where I went back and forth between thinking that I was going to be totally fine and that the medications the doctors wanted me to take were going to make me even more sick.

I had blood taken several times, a CT scan, a chest x-ray, and a couple other appointments with my doctor who, based on the test results, said that I had become "steroid dependent" and wanted to put me on Humira, a biologic drug that you inject into your leg or stomach (maybe you've seen the commercials.) I had already had a blood test to check for some marker that could potentially give me really bad side effects from a different immune-suppressing drug that is often taken in conjunction with Humira, and found that I did have that marker so couldn't take that drug. Knowing that made me really nervous about taking the Humira.....no, I take that back. I wasn't nervous about it, I was scared.

If you have heard the commercials, you've listened to the laundry list of terrible things that can happen to you when you take Humira. And as a couple people pointed out to me, the drug companies have to list every possible side effect and the chances of most of those things happening to me were probably slim. But I couldn't shake the feeling that there just had to be a better way. There had to be a way for me to feel better without risking a whole host of other problems.

But the doctor was pretty insistent that I needed the Humira and so on a Thursday night, when the pharmacy called to schedule my Humira delivery, I said ok, send it tomorrow. The woman that I talked to said that they hesitate to mail on Friday's because someone has to be home to sign for the package since it has to go directly into the refrigerator, and that people usually weren't home on Saturday's to do all of that. But I assured her that we would be home all day and that a Saturday delivery would be fine. I wasn't feeling great about it, but had resigned myself to dealing with this new lifestyle with a smile on my face. I went to bed that night trying to psyche myself up for having to give myself a shot every two weeks, possibly for the rest of my life.

The next day, Friday, I got up and picked up Susan Blum's "The Immune System Recovery Plan" that my mom had given me in July, and started reading. I had read a bit here and there over the summer but never enough to really process what the book was about. But that Friday, I started at the beginning and read half of it without looking up (the kids played together really well that day!). It's basically a four-step process - using food as medicine, learning how to deal with stress, healing your gut, and detoxifying your system - that has given a lot of autoimmune disease patients really good results towards tapering off of medications and feeling better. As she says in the book, biologic drugs really only mask the symptoms of the disease - they don't do anything towards healing the body and getting rid of the underlying cause of disease. I'm not interested in just covering up symptoms. I want to heal my body. But I already had the Humira delivery scheduled and at that point thought that there was nothing I could do.

And then the phone rang. 

It was a different woman from the pharmacy telling me that she was very uncomfortable with a Saturday delivery and would it be ok with me if we rescheduled the shipment for Monday with a Tuesday delivery? 

Um, YES.

I spent the rest of the weekend reading through the book, taking the assessments, learning more about autoimmune disease and deciding that I definitely wanted to wait on taking the Humira and try this approach first. I talked it over with Will who said he would support whatever decision I made, and on Monday morning, the minute the pharmacy opened, I called and cancelled the shipment.

That was about three weeks ago now and I've been following the diet (some recipes shown in photos) and lifestyle plan from Dr. Blum's book ever since. And let me tell you, I have more energy, almost no pain, and my foggy head symptoms have improved dramatically. The diet took some getting used to and is actually the exact opposite of what the doctor told me to eat (doc: low-fiber, well-cooked veggies, white bread, white potatoes, white rice, etc. vs. Dr. Blum: high-fiber, tons of raw or slightly cooked veggies, whole grain gluten-free bread, sweet potatoes, brown rice, etc.) but it's totally worth it to me if I can heal up my gut and go back to feeling like a normal person.

At this point, I've given up gluten, corn, soy, dairy, tomatoes, white sugar, caffeine, chocolate and coffee. They say that if you give something up for 21 days your body doesn't crave it like it may have before. I'm here to tell you that 21 days later, I still want cheese, coffee, sugar and chocolate.  :)  But I'm slowly finding other foods to substitute and honestly, if it means feeling good vs. feeling like I did before, I'm good with leaving it all out forever. But I'm hopeful that if I can heal my gut over the next couple of years with this diet and learning how to better deal with stress and adding in some supplements, that maybe I can add back a little chocolate, cheese pizza, a cup of full-caffeine coffee per day and the occasional bit of white sugar. We'll see. 

Special thanks to my mom for sending me Dr. Blum's book (aka my new best friend - I've been cooking recipes from it and referring back to it every single day)! I'm so thankful to be feeling better and more like myself. For more info on the book or to learn more about Susan Blum, check out her website here. If you have an autoimmune disease (Hashimoto's, MS, Graves Disease, rheumatoid arthritis, etc.) I highly recommend at least reading the book. It made so much sense to me and is already helping me feel better without harsh drugs. 

Just a little update on my road to recovery! We've been enjoying some cooler temps (the highest temp this week is going to be 78!), the return of fall baseball, and Annabel's first ballet lesson. Wishing you a lovely and healthy start to your week!

Quick Fix Dinner

For weeks like this one (busy ones, where I'm working right to a deadline :\) I like to have a slew of ingredients on hand for easy, delicious dinners. Enter: Aidells meatballs, World Menu Risotto & Dole's Caesar Salad kit. The whole shebang can be made in fifteen minutes and it tastes just like homemade. Robert and I have been enjoying this at least once a week since we came back from our honeymoon, and in fact, enjoyed it for supper last night.

If you're looking to lighten things up a bit, I sometimes substitute regular brown rice for the risotto and sauteed kale for the Caesar salad. Hope this gives you a dinner idea for your next busy week! Look for all of the ingredients at your local GIANT.

Insta-Wednesday: Farewell to Summer

The mornings in Carlisle officially feel like fall (I could see my breath yesterday morning!) but by afternoon, summer temps have usually returned. That said, there's a recognizable shift in the air, and I feel like I'm officially bidding farewell to the best summer I can remember in a long time. I snapped this photo of a fancy beetle when I went running the other day, and for whatever reason, it's what came to mind when I though of saying seeya to summer. Maybe it's that fall feels less whimsical and more like routine, or maybe it's because of the way the sunlight slants in the background of this photo. Whatever the case -- goodbye summer of 2015! I'm always sad to see summer go but feel especially so this year.  With Matt off work for much of the summer and the excitement of Carrie and Roberts wedding; it really was an absolutely wonderful summer.  But, I love fall and all that it brings and am so glad to finally pull out jeans and long sleeves.  One telltale sign of summers end for us is the start of soccer.  We have enjoyed being back on the sidelines cheering on our favorite coach these last few weeks.

kid in the kitchen

A few weeks ago, Tommy wandered into the kitchen while I was making dinner and asked if he could help. I gave him a job which he completed easily and quickly before asking me for something else to do. As we made dinner together that night, he looked at me at one point and said, "Hey Mama, maybe I can make dinner for you one night every week! That way you could have a night off and I can make dinner all by myself." 

To which I responded, "Buddy......YOU GOT IT." 

So we started looking for a kid-friendly cookbook, finally found a good one, and started dog-earring pages of meals that looked good. Two weeks ago, on a Thursday night, Tommy got into the kitchen for his first-ever night of cooking (mostly) on his own. I offered a few tips and tricks along the way and although he did come away with a small burn on his arm, he survived, and even had a good time. Week two was even better as he was feeling a little more confident and excited to eat something he had made on his own. 

I think it's so important to get kids in the kitchen to learn how to cook since it's a skill they can use for their entire lives. I've been inviting Tommy (and Annabel!) to help me in the kitchen ever since he was big enough to stand on a chair next to me. Even if he was just snapping beans or stirring sauce in a bowl or helping me scramble up some eggs, I always wanted to try and find something for him to do so he would be interested not only in cooking, but in eating. He's always more willing to try a new food if he helped make it in the first place. This was especially fun when we had our beautiful garden at our old house (next year we'll have one here, too!) where he could pick the food, cook the food, and then eat the food. Really looking forward to having that opportunity next summer for both of the kids.

The chicken legs were a HUGE hit with all four of us, but unfortunately the cook wasn't thrilled with his mashed potato pie. Annabel, on the other hand, declared it "the best meal ever" and gave her brother a huge hug for making her such a delicious dinner. So far I'd call Tommy's efforts in the kitchen a definite WIN! and we're looking forward to lots more cooking adventures to come. We'll be finishing out September with Sausage Popovers and Tuna Fishcakes.

Wishing you a good start to your week! Annabel was supposed to have her first day of Pre-K today but she's had a fever all weekend and can't go. Hope she'll be well enough to go tomorrow. We'll be enjoying a slow day today and spending as much time as possible out on the front porch in the beautiful fall weather. Hope it's a nice day where you are. Happy Monday!

into the woods

About a month ago, we had a little get-a-way weekend to the beautiful Pocono Mountains.  We spent a few days in a little cabin in the woods and spent our time fishing, hiking , building fires and relaxing.  It was glorious.  We had so much fun enjoying the serene quiet by the lake and taking in the gorgeous views.  I went a little overboard with the pictures here but Promised Land was so beautiful, I just had to share!
