Sunday Snack

This past Sunday was the perfect kind of weekend day. The weather was beautiful, I had finished a 5-6 mile walk with my best friend before 1:30, finished grocery shopping by 2:30 and had the rest of the afternoon/evening to do laundry, relax and make dinner. Around 3:30 I decided I was a little hungry and realized that I had all of the ingredients to make the puffed pancake recipe I had seen a few times over on the lovely blog LoveTaza. This ridiculously easy pancake is very reminiscent of something my mom makes often, called Mary Jane Eggs (basically a large turnover with blueberries). I used strawberries here, because I had them, but you could really top this with anything you wanted: raspberries, bananas, syrup, nutella - or some combination you create! I am already looking forward to making this again next Saturday morning. :)


Ingredients:
-1/2 cup milk
-1/2 cup flour
-2 eggs
-pinch of cinnamon
-pinch of salt
-1 tablespoon of butter
-assorted toppings

Directions:
-Pre-heat the oven to 425◦.
-Mix together the milk, flour, eggs, cinnamon and salt with a whisk or fork. (If you want this to be slightly sweeter, you could add a bit of sugar and/or vanilla.)
-Meanwhile, melt the tablespoon of butter over medium heat in a pan that can go from stove top to oven. My cast iron skillet worked great here, but if you don't have one, a pie plate or casserole dish would work well.
-Pour the prepared batter directly into the hot butter. Place in the oven and bake for 10-12 minutes. (It should be golden and gently puffed throughout, but mostly around the edges.)
-Plate and top with your choice of toppings!






This is absolutely perfect as is, but I am really tempted to play around with the recipe a little; I keep dreaming of mixing ground strawberries into the batter and topping it with melted marshmellow fluff! Oh the possibilities! Enjoy!! xo
