food you want to eat

Food is important, yes? And it seems to me that food falls into two very specific categories: food you want to eat, and food you...well, don't want to eat. The food I'm about to show you definitely falls into the "food you want to eat" column, and I would even suggest to you that this one warrants a third category: food you want to eat A LOT OF. It's my (and Will's, too!) new favorite dinner to make and eat as it hits all of my "must-haves" on the dinner-making list:  quick, easy, delicious. I hope you'll give it a try and enjoy it as much as we do!

I made this for the first time after placing my first-ever order from Relay Foods. I found the recipe there on the website and proceeded to purchase all of the ingredients and make it just a few days later. Will loved it so much that I've made it almost every week since, including at our cabin when we went on our weekend away

Sausage and Sweet Potato Hash
adapted from Relay Foods website

4-5 sweet potatoes
2lbs breakfast sausage
1 onion, chopped
1 green pepper, chopped
1-2 eggs
salt and pepper to taste


Preheat oven to 400 degrees. Cut sweet potatoes into bite-sized pieces and place on cookie sheet. Drizzle with olive oil, then salt and pepper to taste. Roast for 15-20 minutes. 


While the potatoes cook, brown the sausage. 


When it's almost cooked through, remove most of the grease from the pan and add the onion and pepper. Cook until the sausage is done and the vegetables are softened. 


Once everything is done, fry up an egg (we like over-easy) and then pile everything up on your plate.

You can definitely cut this recipe in half if you don't want leftovers, but believe me, you will want to have leftovers for breakfast (and lunch!) the next day. If you want to go a little healthier, you could use turkey sausage and I think kale would be a really great addition.
