I don't always cook dinner.

Sometimes I microwave it! I mentioned yesterday that life has been feeling a little fast-paced lately, and to be honest, I don't really see that changing in the next few weeks. So instead of sharing a recipe with you this week, I thought I would let you in a on a delicious little shortcut- these garden lites souffles! They come in a lot of different flavors (broccoli, butternut squash, pizza & Southwestern, to name a few), and are an easy, delicious and somewhat nutritious solution to dinner on a weeknight when you're wrapping presents, going to the grocery store, washing dishes, doing laundry and squeezing in zumba.

This is also great to have on hand in the frig.
