Theme Week: Popsicles

Hello and welcome to Theme Week:  Popsicles!  This week we'll all be featuring a different popsicle recipe for you to try at home.  All you need is a set of molds (or a package of Dixie cups and some popsicle sticks) and you're good to go.  Hope you'll give them a try!  

First up:  Rockstar pops!  I found this recipe in my copy of "Ice Pop Joy" and couldn't wait to try it.  Here's how to make them:

Rockstar with Strawberry Agave Jam

1 cup strawberries, chopped
3 TBSP raw agave nectar
1 cup raw kale, chopped
1/2 cup blueberries
2 bananas
1 cup water
1 TBSP wheat germ



Over medium heat, combine strawberries and agave nectar in a small pot and simmer until the strawberries break down and look like jam.

Put a small amount of jam into the bottom of each popsicle mold and let harden at room temperature for about 15 minutes.



While the strawberry jam sets up, combine kale, blueberries, bananas, water, and wheat germ in a blender or food processor and blend until smooth.



Once the jam is set, pour in the kale/blueberry mix to fill the popsicle molds.  Place sticks.

Freeze and enjoy!



Notes:  The strawberry agave jam is SO GOOD I wanted to eat it out of the pot with a spoon.  The blueberry/kale mixture is also good, but since I used frozen berries instead of fresh (I find frozen berries to be less sweet than fresh) I added an extra tablespoon of the agave nectar to it to sweeten it up just a bit.  Even though they're pretty as they are, next time I make these, I'm thinking of mixing the jam right into the blueberries so it'll be all through the pops instead of just at the top.  That would sweeten them up without having to add the extra agave.
